Instructions

Step 1: Toast the Bread
Place your bread slices in a toaster or toaster oven and toast until golden brown and crispy, about 3-4 minutes.

Step 2: Prepare the Avocado
While the bread toasts, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add lemon juice, salt, and pepper. Mash with a fork until you reach your desired consistency chunky or smooth.

Step 3: Cook the Eggs
Heat olive oil or butter in a non-stick skillet over medium heat. Crack the eggs into the pan and cook to your preference. For sunny-side up, cook for 3-4 minutes until whites are set but yolk is runny. For over-easy, flip carefully and cook for 1 more minute.

Step 4: Assemble Your Avocado Toast
Spread the mashed avocado evenly over each slice of toasted bread. Carefully place one cooked egg on top of each slice.

Step 5: Add Toppings and Serve
Season with additional salt, pepper, and your choice of toppings like red pepper flakes, everything bagel seasoning, or fresh herbs. Serve immediately while the toast is crispy and the egg is warm.
