For the Pasta:

  • 400 g (14 oz) spaghetti or linguine
  • Water for boiling
  • 1 teaspoon salt (for pasta water)

For the Garlic Butter Sauce:

  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • ½ teaspoon red chili flakes (optional)
  • Salt and black pepper to taste
  • ½ cup pasta cooking water (reserved)
  • 2 tablespoons olive oil

For the Garnish:

  • Fresh basil leaves
  • Freshly grated Parmesan cheese (or Pecorino Romano)
  • Zest of half a lemon (optional, for brightness)

Instructions

  • Boil the Pasta. Bring a large pot of water to a rolling boil over high heat. Add 1 tsp of salt the water should taste pleasantly salty. Add the pasta and cook until al dente, typically 8–10 minutes. Before draining, scoop out ½ cup of the cloudy pasta water and set aside.
  • Sauté the Garlic. While the pasta cooks, heat olive oil and butter together in a large skillet over medium heat. Once the butter melts and foams, add the minced garlic. Sauté for 1–2 minutes, stirring constantly, until golden and fragrant not brown.
  • Cook the Cherry Tomatoes. Add the halved cherry tomatoes to the skillet. Cook for 3–4 minutes, pressing them gently with a spoon until they soften and release their juices. Season with salt, black pepper, and chili flakes if using.
  • Toss Pasta in the Sauce. Drain the pasta and transfer it directly into the skillet. Add the reserved pasta water start with ¼ cup and add more as needed. Toss vigorously over medium-low heat for 1–2 minutes until the sauce is glossy and coats every strand.

 

  • Plate and Serve. Divide between 4 plates. Top with fresh basil, grated Parmesan, and lemon zest if using. Serve immediately.

Notes

Substitutions:

  • Gluten-free: Use rice or chickpea pasta adjust cook time per package.
  • Vegan: Replace butter with vegan butter or extra olive oil (3 tbsp total). Use nutritional yeast instead of Parmesan.
  • No cherry tomatoes? Use 2 diced roma tomatoes or a drained 400 g can of whole peeled tomatoes.
  • Add protein: stir in drained canned tuna, sautéed shrimp, or shredded cooked chicken in Step 4.

Make-Ahead:

  • Mince garlic and halve tomatoes up to 24 hours ahead. Store separately in the fridge.
  • Cook pasta 1 minute under al dente for meal prep. Toss with olive oil and refrigerate up to 2 days.
  • The garlic butter tomato sauce keeps in the fridge for up to 3 days. Reheat gently before combining with pasta.

Storage:

  • Fridge: Store in an airtight container for up to 3 days.
  • Reheat: Add a splash of water or olive oil and warm in a pan over low heat, or microwave covered with a damp paper towel in 60-second intervals.
  • Freezer: Freeze only the sauce (not assembled pasta) for up to 1 month. Thaw overnight in the fridge.
