Ingredients

For the Bison Patties:
- 1½ pounds ground bison meat
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¾ teaspoon sea salt
- ½ teaspoon black pepper
- 1 tablespoon Worcestershire sauce

- 4 burger buns (whole wheat or brioche)
- 4 lettuce leaves
- 1 large tomato, sliced
- 1 red onion, sliced

Instructions

Step 1: Prepare the Bison Meat
In a large mixing bowl, combine the ground bison, garlic powder, onion powder, salt, black pepper, and Worcestershire sauce. Mix gently with your hands until just combined, don’t overwork the meat or your burgers will become tough.

Step 2: Form the Patties
Divide the mixture into 4 equal portions and shape into patties about ¾-inch thick. Make a small indent in the center of each patty with your thumb to prevent bulging during cooking.

Step 3: Preheat Your Grill or Pan
Heat your grill to medium-high heat (about 375-400°F) or heat a cast-iron skillet over medium-high heat. Lightly oil the grates or pan to prevent sticking.

Step 4: Cook the Burgers
Place patties on the grill or in the skillet. Cook for 4-5 minutes on the first side without moving them. Flip once and cook for another 3-4 minutes for medium doneness (internal temperature of 145°F).

Step 5: Add the Cheese
During the last minute of cooking, place a slice of cheese on each patty. Cover the grill or pan briefly to help the cheese melt perfectly.

Step 6: Toast the Buns
While the cheese melts, place your burger buns cut-side down on the grill or in a separate pan for 1-2 minutes until lightly toasted and golden.

Step 7: Assemble Your Burgers
Spread your desired condiments on the bottom bun. Add lettuce, then the bison patty with melted cheese, followed by tomato, onion, and pickles. Top with the other half of the bun.

Step 8: Serve Immediately
Serve your bison cheeseburgers hot with your favorite sides like sweet potato fries, coleslaw, or a fresh salad.
Notes
- Don’t Overcook: Bison is very lean and cooks faster than beef. Cook to medium doneness (145°F) to keep burgers juicy. Overcooking will result in dry burgers.
- Don’t Overwork the Meat: Mix ingredients gently and handle the meat as little as possible to maintain tender, juicy patties.
- Use a Meat Thermometer: For best results, use an instant-read thermometer to check doneness. 145°F = medium, 160°F = medium-well.
- Indent Tip: The thumb indent in the center prevents the patty from puffing up into a ball shape during cooking, ensuring even thickness.
