Step 1: Prepare Your Ingredients
Gather your cottage cheese, cocoa powder, maple syrup, vanilla extract, and salt. Make sure your cottage cheese is cold from the refrigerator for the best texture.

Step 2: Blend Until Smooth
Add the cottage cheese, cocoa powder, maple syrup, vanilla extract, and salt to a high-speed blender or food processor. Blend on high for 60–90 seconds until completely smooth and creamy with no lumps remaining.

Step 3: Taste and Adjust
Stop and taste your cottage cheese chocolate mousse. If you prefer it sweeter, add another tablespoon of maple syrup and blend for 10 more seconds. The mousse should be rich, chocolatey, and perfectly balanced.

Step 4: Chill (Optional)
For the best texture and flavor, transfer the mousse to serving bowls or glasses and refrigerate for 15–30 minutes. This step is optional but makes the mousse extra thick and luxurious.

Step 5: Serve and Enjoy

- Best Blender: A high-speed blender (Vitamix, Ninja, or Blendtec) creates the smoothest texture. Regular blenders work but may require longer blending time and scraping down sides.
- Cottage Cheese Type: Full-fat cottage cheese creates the creamiest mousse. Low-fat works but will be slightly less rich. Small curd or large curd both work perfectly blending makes them equally smooth.
- Sweetener Options: Maple syrup and honey work best for smooth blending. Granulated sweeteners can leave a grainy texture. Start with 2 tablespoons and adjust to taste.
- Cocoa Powder Quality: Use unsweetened cocoa powder only. Dutch-process cocoa gives deeper, richer flavor; natural cocoa is lighter and more acidic. Both are delicious.
- Make It Ahead: Prepare up to 3 days in advance and store covered in the refrigerator. Stir before serving as it may thicken slightly.
