For the Topping:

  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon yellow mustard

Instructions

  • Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or lightly grease it with cooking spray.
  • In a large mixing bowl, combine the ground beef, crushed Ritz crackers, diced onion, beaten eggs, milk, ¼ cup ketchup, salt, pepper, garlic powder, and dried thyme. Mix until just combined. Don’t overmix.
  • Transfer the meat mixture to your prepared loaf pan. Press it down gently and shape it evenly.
  • In a small bowl, whisk together ½ cup ketchup, brown sugar, apple cider vinegar, and yellow mustard until smooth.
  • Spread half of the topping mixture evenly over the top of the meatloaf.
  • Bake for 45 minutes.
  • Remove the meatloaf from the oven and spread the remaining topping over it. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
