Ingredients

- 3 cups mixed berries (strawberries, blueberries, raspberries, blackberries) – fresh or frozen
- ¼ cup granulated sugar (adjust to taste)
- 2 tablespoons water
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest (optional)
- ½ teaspoon vanilla extract (optional)
Instructions
- If using fresh strawberries, hull and halve them. Other berries can be left whole. Frozen berries can be used directly without thawing.
- In a medium saucepan, add the berries, sugar, and water. Stir gently to combine.
- Bring the mixture to a gentle simmer over medium heat, stirring occasionally. The berries will start to release their juices after 2–3 minutes.
- Continue cooking for 8–10 minutes, stirring occasionally, until the berries break down and the compote thickens slightly. Use a wooden spoon to gently mash some berries if you prefer a smoother texture.
- Remove from heat and stir in the lemon juice, lemon zest, and vanilla extract if using. The compote will continue to thicken as it cools.
- Let the berry compote cool for a few minutes before serving, or transfer to a jar and refrigerate for later use.
Notes
- Sugar adjustment: Start with 2-3 tablespoons if your berries are very sweet, or increase to ⅓ cup if using tart berries like cranberries or sour cherries.
- Thickening tip: The compote will thicken as it cools. If you want it thicker while cooking, mix 1 teaspoon cornstarch with 1 tablespoon water and stir in during the last 2 minutes.
- Storage: Refrigerate in an airtight container for up to 5 days. Freeze in small portions for up to 3 months.
- Serving suggestions: Perfect over pancakes, waffles, French toast, yogurt, oatmeal, cheesecake, ice cream, or spread on toast.
- Berry ratios: Any combination works! Single berry varieties (all blueberries or all strawberries) are equally delicious.
