  • Total Time: 32 minutes
  • Yield: 12 muffins

Ingredients

Scale
Gluten free blueberry muffins ingredients arranged neatly on a kitchen counter.

Dry Ingredients:

  • 2 cups gluten free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar

Wet Ingredients:

  • 2 large eggs (room temperature)
  • ½ cup vegetable oil or melted coconut oil
  • 1 cup plain Greek yogurt or sour cream
  • 2 teaspoons vanilla extract
  • ¼ cup milk (dairy or non-dairy)

Mix-ins:

  • 1½ cups fresh or frozen blueberries
  • 1 tablespoon gluten free flour (for coating berries)

Topping (optional):

  • 2 tablespoons coarse sugar

Instructions

Step 1: Preheat and Prepare
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well with cooking spray.

Step 2: Mix Dry Ingredients
In a large mixing bowl, whisk together the gluten free flour, baking powder, baking soda, salt, and sugar until fully combined.

Step 3: Combine Wet Ingredients
In a separate bowl, whisk the eggs, oil, Greek yogurt, vanilla extract, and milk until smooth and creamy.

Step 4: Combine Wet and Dry
Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula until just combined. Don’t overmix, some lumps are okay.

Step 5: Prepare Blueberries
Toss the blueberries with 1 tablespoon of gluten free flour in a small bowl. This prevents them from sinking to the bottom. Gently fold the coated berries into the batter.

Step 6: Fill Muffin Cups
Divide the batter evenly among the 12 muffin cups, filling each about ¾ full. Sprinkle coarse sugar on top if desired for a bakery-style finish.

Step 7: Bake
Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. The tops should be golden and spring back when lightly touched.

Step 8: Cool and Serve
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

  • Gluten Free Flour: Use a 1:1 gluten free baking blend that contains xanthan gum (like Bob’s Red Mill or King Arthur Measure for Measure). If your blend doesn’t include xanthan gum, add ½ teaspoon to prevent crumbly muffins.
  • Blueberries: Fresh or frozen blueberries work equally well. If using frozen, do not thaw them first. Coating berries in flour prevents them from sinking to the bottom.
  • Yogurt: Greek yogurt creates the moistest texture, but sour cream works as a substitute. For dairy-free, use coconut yogurt.
  • Don’t Overmix: Mix the batter until just combined. Overmixing develops too much structure and leads to dense, tough muffins.
  • Room Temperature Eggs: This helps create a smoother batter and better rise.
  • Storage: Store in an airtight container at room temperature for 3 days, refrigerate for up to 1 week, or freeze for up to 3 months
