Ingredients

For the Casserole:
- 3 pounds russet potatoes, peeled and cubed
- ½ cup sour cream
- ¼ cup butter, softened
- ½ cup whole milk
- 2 cups shredded cheddar cheese, divided
- 6 slices turkey bacon, cooked and crumbled (halal alternative)
- 3 green onions, sliced
- 1 teaspoon garlic powder
- ½ teaspoon salt

Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- Place cubed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and cook for 15–18 minutes until fork-tender.
- Drain the potatoes well and return them to the pot. Mash until smooth using a potato masher or hand mixer.
- Add sour cream, butter, milk, garlic powder, salt, and pepper to the mashed potatoes. Stir until creamy and well combined.
- Gently fold in 1½ cups shredded cheddar cheese, crumbled turkey bacon, and sliced green onions until evenly distributed.
- Spread the potato mixture evenly into the prepared baking dish.
- Sprinkle the remaining ½ cup cheddar cheese, crumbled turkey bacon, and green onions on top.
- Place in the preheated oven and bake for 25–30 minutes, until the cheese is melted and bubbly and the edges are golden.
- Remove from the oven, let it cool for 5 minutes, then serve and enjoy!
Notes
- Potato Choice: Russet potatoes are recommended for their starchy texture that mashes smoothly. Yukon Gold can be used for a creamier result.
- Make-Ahead: Assemble the casserole up to 24 hours in advance, cover with foil, and refrigerate. Add 5–10 minutes to baking time if cooking from cold.
- Storage: Refrigerate leftovers in an airtight container for up to 4 days. Reheat in the oven at 350°F or in the microwave.
- Freezing: Freeze the baked casserole (without final toppings) for up to 3 months. Thaw overnight, add fresh toppings, and reheat.
